This Winter warmer is the best version of pumpkin soup that I have ever tried. I love my soups – except Minestrone, makes me yak! – and this is by far my favourite. It is so simple to make and served with some oven warmed Turkish bread or some fresh homemade bread, just perfect!
You can also modify this recipe by substituting the potatoes for sweet potatoes and adding some carrots which is also another great version of this soup (I had this version just last week as ran out of potatoes).
Ingredients:
½ cup diced onion
1 tbs butter
5 cups peeled and diced pumpkin
1 cup diced potatoes
2 cups (500ml) water
2 chicken stock cubes
1 pinch ground ginger
1 pinch ground nutmeg
salt and pepper to taste
2 cups (500ml) milk
Method:
In a large saucepan cook onion in butter.
Add pumpkin, potatoes, water, ground ginger, ground nutmeg, chicken stock and season with salt and pepper.
Cook for 20 minutes or until pumpkin and potatoes are tender.
Add milk, blend until smooth and serve.
