1 cup self-raising flour
1 zucchini, coarsely grated
1 tbs vegetable stock powder
½ cup milk
420g can corn kernels, drained
¼ cup chopped chives
Oil for cooking
Place flour and stock powder in a large mixing bowl and make a well in the centre.
Using a fork mix in the eggs and milk. Add corn, zucchini and chives, stir well until combined.
Heat a little oil in a non-stick frying pan and drop ¼ cup of fritter mixture into the pan. Cook for 1-2 minutes each side until golden and cooked through. Repeat with remaining mixture.
