1 tsp sugar
½ tsp cayenne pepper
2 ounces passion fruit juice
½ ounce simple syrup
1 ounce lemon juice
Mix sugar and cayenne pepper together and dip 2 lightly wetted flutes into the mixture.
Shake ice, passionfruit juice, simple syrup and lemon juice in a cocktail shaker.
Strain into the flutes, and top with champagne.
