I love Thai food – it is definitely my favourite cuisine. As such, I had to find a way to make my beloved coconut rice without resorting to going to the local Thai shop each time I wanted it. I found the below recipe online and is super quick and super easy. What’s better, my hubby loves it as a use light coconut milk instead of full cream and he says the flavour isn’t as overwhelming as store bought coconut rice. Even my puppies love it!

Cooking Time: 15 minutes
Total Time: 20 minutes
2 cups Jasmine Rice
1 ½ cups water
1 cup canned unsweetened coconut milk
1 tsp salt
Rinse and drain rice in cold water. Place in a saucepan with water, coconut milk, and salt. Place the pot over high heat and bring the liquid to a boil. Stir and reduce the heat to the lowest possible setting and cover the pot tightly with the lid. Continue cooking for 15 minutes.
Remove the pot from the heat and let stand for 10 minutes, covered. Fluff with fork and serve.
