Crunchy Noodle Salad

My mother-in-law makes this for family events and it is my absolute favourite recipe – I can never get enough of it! In the original you can add 1/3 cup slivered almonds (toasted), but we generally omit these as no one really likes them in our household. This is so easy to make and everyone who tries it, loves it.


1 tbs white vinegar
1 tbs caster sugar
2 tsp soy sauce
½ tsp sesame oil
¼ cup rice bran oil
1 small iceberg lettuce, shredded
6 green onions, cut into 2cm lengths
100g packet original fried noodles


Place vinegar, sugar, soy sauce and oils in a small saucepan over low heat. Cook, stirring, for 2 to 3 minutes or until sugar has dissolved. Remove from heat. Allow to cool.

Place lettuce and onion in a large bowl. Drizzle with dressing. Toss to combine. Add noodles. Toss to combine. Serve immediately.
