RECIPE: French Onion Bechamel Sauce

This is my go to sauce when creating anything – from Mac and Cheese (just add more types of cheese to the sauce) to cauliflower bake and as a dipping sauce for chips. It is quick and easy and tastes divine!

If you need a larger amount of sauce – to make for pastas or use in lasagne – just double the recipe, as long as you match the amount of flour and butter, the rest is easy to follow. So for a large mac and cheese to serve 8 people, I generally do 8 tbs plain flour with 8 tbs butter and so on.


1 teaspoon Dry French Onion Soup Mix
2 tablespoons plain flour
2 tablespoons butter
2 – 3 cups Milk
½ – 1 cup Grated Parmesan Cheese
1 – 2 cups Grated Tasty Cheese


Melt butter in a saucepan over medium heat. Add plain flour. Once stirred through and slightly bubbling, add French Onion Soup Mix, and stir until bubbling. Gradually add in milk (This is dependent upon desired consistency).

Bring to the boil. Reduce heat slightly and cook, stirring for 4-5 minutes or until mixture thickens. Add Parmesan and Tasty Cheese and continue to stir through until a thick sauce is produced.
