I decided to give these a crack the other night, as I use to love Jesters Pies apple and custard pies. One problem I had with mine was that the pastry on the bottom didn’t cook right through and still looked raw (but I couldn’t taste anything wrong with it…. Maybe next time I’ll try making it minus the base of pastry? Who knows?!)
I pre-made the custard mix with my Easy Custard Recipe and followed the prompts below…
3 sheets of thawed puff pastry
2 apples, diced
Pre-make the custard mix (link above). Set aside.
Pre-heat oven to 180°C.
Spray base of pie pans with some Coconut Oil Spray and lay the base with pastry (you can omit this step if you want a pastry-less base).
Layer pan with diced apples, sprinkle some cinnamon and top with custard mix. Lay puff pastry sheet over the top and seal the edges.
Bake in oven for 20 – 30 minutes or until pastry is puffed and golden. Allow to cool for a few minutes and serve sprinkled with some icing sugar.
NOTE: Leftover pies can be stored in a container in the fridge and reheated next day in the oven for approx. 20 minutes (or until warm in centre).
