I had a few brown banana’s my dad gave me before he left for his cruise (lucky him!) and decided to give Banana Bread a go for my hubby. I had only two large bananas but it still turned out pretty good. Additionally, I had no Baking soda so had to substitute the 1 tsp Baking Soda with 2 tsp Baking Powder.
Can serve with some soft butter or eat as is. Also, you can add pretty much anything to the recipe before you cook it such as choc chips, Nutella, blue berries…
2 – 4 large bananas (brown, mashed)
1/3 cup melted butter
1 cup sugar
1 egg, whisked
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 ½ cups plain flour
Preheat oven to 180°C.
In a bowl, mix all ingredients until well incorporated.
Pour into a greased bread pan (I use coconut oil spray, gives a little extra flavour, but can always just use butter.)
Bake for 50 – 60 minutes or until browned and toothpick inserted in the middle comes out clean.
Cool on rack.
