I found this recipe on Pinterest (DUH! What’s new?!) and had to give it a go as I had a tonne of lemons left over after Christmas/New Years (There were a lot of leftover Corona’s!)
You could make this recipe gluten free (which is what I need to do) by using gluten free flour instead of regular flour. This recipe is super quick and easy and hubby enjoyed it, so it’s a keeper!
6 Chicken Breast halves
½ cup plain flour
½ tsp salt
2 tsp lemon pepper seasoning
3 tbs butter
1 tbs olive oil
2 lemons, slices
1 lemon, for juice
In a shallow bowl, combine the flour and salt. Coat chicken breasts with flour mixture. Sprinkle chicken breasts with lemon pepper seasoning.
Melt butter and olive oil in a fry pan and cook the chicken breasts in the hot oil/butter over a medium-high heat until brown and cooked through.
Remove chicken from pan.
Add lemon slices to pan and cook for 2-3 minutes or until lightly browned, turning once. Return all chicken to the pan. Drizzle lemon juice over the chicken breasts and cook for 2-3 minutes and serve.
