Found a recipe for chicken ranch pasta on the internet the other day and decided to make it for lunch today… with a few modifications.
I added Parmesan cheese to the recipe and changed the quantities to suit my taste.
All in all, hubby liked it and is looking forward to the leftovers for lunch tomorrow.
2 tbs butter
2 tbs flour
¾ cup Ranch dressing
2 cups milk
2 cups shredded cheddar cheese
1 cup Parmesan cheese
2 rashers middle bacon, chopped
2 chicken breasts, chopped
In a large pot, cook pasta until al dente. Drain and set aside.
Meanwhile, cook cubed chicken breasts and bacon in a pan.
In a separate pot, melt butter and add flour and stir. Cook flour for approx. 1 minute. Slowly stir in milk and continue to cook until sauce thickens.
Stir in ranch dressing and cheese’ and stir until cheese’ melts.
Add chicken, bacon and pasta and stir to coat.
