This is my go to side when I want something super easy but yummy. The recipe below is to roughly serve a side for four people.
6 large potatoes, diced
2-3 tbs. butter
Salt and pepper, to taste
Boil (or steam) potatoes until tender – should fall apart when poked through with a fork.
Add butter and begin to mash. Gradually add milk until potatoes become fluffy – don’t add too much otherwise it will turn into a thick soupy goop.
Add chicken salt, salt and pepper to taste.
End result should resemble a white fluffy cloud.
