This recipe is from my best friend, she made it for us one night at her house and had to have the recipe. So simple, yet so so yummy! Serve with a side of warm bread or garlic bread.
2 tbs. butter
1 tbs. oil
5 mushrooms – sliced
2 chicken breast – cubed
1 tub Philadelphia cooking cream
5 spring onions
Melt butter and oil in pan, add mushrooms and cook for a few minutes.
Whilst melting butter, bring a pot of water to the boil, add salt and oil, and add desired pasta. Cook to al dente.
Add chicken breasts – cubed – into butter and cook through.
Once chicken is cooked, add Philadelphia cooking cream (or thickened cream can be used as a substitute) and slowly bring to bubble.
Add sliced spring onions and garlic salt/granules and stir through for a few minutes.
Serve with a sprinkling of Parmesan cheese.
